Summertime Lemon-Pea Pasta

We make some good garlic, but THIS DISH! It's what makes THAT'S GOOD GARLIC! into GREAT FOOD!

What makes it even better? It's a really flexible recipe, so be brave and experiment with similar ingredients you have on hand. We will add some suggestions below in the recipe and more suggestions after the recipe. I make double batches of this for farm lunches, a snack for hungry kiddos or just an extra side dish with dinner if traffic is bad. (That hasn't been the case lately...)  It's a light and refreshing way to enjoy veggies and the lemon gives it a summertime feel. 

Ingredients:

1 box of cooked pasta 
    Pictured is orecchiette. (Use orzo, angel hair, bow tie, macaroni, etc.)

1.5 - 2 cups frozen peas, slightly thawed
1/2 - 3/4 cup of Parmesan, Asiago, Romano cheese or whatever Italian hard, aged cheese you have. Grated, shredded or shaved works great. 
1 Lemon - zested, then juiced
Just less than 1/3 cup Olive Oil
A handful of finely trimmed fresh basil
1-2 teas THAT'S GOOD GARLIC!
Sea salt and fresh ground pepper

  For the dressing:  In a bowl large enough to hold the pasta and other ingredients, whisk together lemon juice, oil, basil and THAT'S GOOD GARLIC!.

  Gently toss cooled pasta, peas, cheese and lemon zest with the dressing adding salt and pepper to taste. 

  Refrigerate for at least 30 minutes. This keeps for up to 48 hours. 

Protein add-ins: leftover cooked chicken, rinsed Wild-caught Albacore tuna, coarsely-chopped hard-boiled eggs, slivered raw almonds.

Veggie add-ins: chopped cooked broccoli or asparagus, zucchini noodles, or slightly blanched kale. You decide!
