Roasted Asparagus
Next time you're at your local farmers market, don't forget to pick up fresh, local asparagus! Roasting is an easy way to prepare the stalks, and with the summer months coming along, grilling is another great way to enjoy this seasonal favorite.
If the stalks are too thick, trim them down with a peeler. This helps for more consistent results from tip to stem.
Place asparagus on a roasting tray or cookie sheet. Line with parchment or foil, or pictured here, just a bare sheet got the job done nicely.
Brush 1-3 Tbsp THAT'S GOOD GARLIC! over asparagus. Sprinkle with kosher sea salt (or smoked salt) and fresh-cracked pepper.
Roast at 425º for 15-20 minutes, or until desired tenderness is reached. Turn asparagus once or twice while roasting.
I serve this dish up with some fresh-squeezed lemon, lemon zest and shredded parmesan, but choose what you like or what you have on hand.
